Anthocyanins

Anthocyanins are water-soluble pigments, the colour of which depends on the pH of the environment. In the food industry, they are also used as colourants for their beneficial effects on the body. Anthocyanins promote the healing of wounds and damaged tissues, are beneficial to blood vessels and the heart, break down fats and treat stomach ulcers. They occur naturally, for example, in red cabbage or blueberries.
